THE BEST PUMPKIN MUFFINS | vegan pumpkin muffins - Duration: 4:36.
Hey guys, it's Nisha.
Welcome back to RainbowPlantLife.
Today I'm going to be showing you how to make the most decadent and delicious pumpkin spice
muffins.
They're like pumpkin pie but in muffin form so it's really cute.
And they have a little crunchy crumble to go on top.
This is the perfect recipe if you're trying to impress your friends with your fall baking
skills, or just looking for an old-fashioned baked good that just happens to be vegan.
Alright, let's get straight into the recipe.
These are the dry ingredients you'll need to make these pumpkin spice muffins: flour,
oats, almond meal, pumpkin pie spice and a mixture of baking soda, baking powder and
sea salt.
For the wet ingredients, you'll need pumpkin puree, maple syrup, plant based milk, brown
sugar, a mashed banana, flax eggs, melted coconut oil and vanilla extract.
To start off with the wet ingredients, we're going to mix together the pumpkin puree, banana,
brown sugar, maple syrup, coconut oil and vanilla extract.
Use a whisk to combine everything together until no large clumps remain.
Then you're going to add in the two flax eggs that you've prepared in advance - this
is just flaxseed meal mixed with water.
And it helps thicken and bind the batter, just like traditional eggs.
Next, slowly stream in the plant-based milk - I'm using almond milk.
This helps control the texture of your batter without adding too much liquid at once.
Then, gradually add the dry ingredients to the wet ingredients in four separate batches.
This helps prevent your batter from having those weird unmixed clumps of flour and it
also helps avoid overmixing the batter, which can toughen it.
Just gently mix it with a wooden spoon until just combined.
I also added raisins to the batter because I like that nice little chewy bite, but if
you don't like raisins, you can omit them or replace them with chocolate chips or chopped
nuts.
To make the crunchy crumble topping, you'll mix together all-purpose flour, brown sugar,
vegan butter - I used Earth Balance — some cinnamon and pumpkin spice, and chopped pecans
and pumpkin seeds.
Just use a set of clean hands to mush that all together, or if you have a pastry cutter,
you can use that as well.
Once you've topped the muffins with the crunchy crumble topping, you'll bake them
in a preheated oven at 350 degrees Fahrenheit or 175 degrees Celsius for about 25-30 minutes.
This is what the muffins look like when they're done baking.
And I just want to show you the soft, moist interior once you pull apart one of these
muffins.
I like to serve them best with warmed up with a little bit of vegan butter.
