Another awesome biryani recipe
We always cook this mutton biryani during Eid
And it tastes incredible

The ingredients needed for mutton biryani
500 g long grain basmati rice
1 Kg mutton with dense fat
Wash & dry the mutton
Try to get mutton with dense fat
Biryani tastes better with fatty mutton
Reyazi means mutton with more fat
I had mentioned in my Kolkata Chicken Biryani recipe
Mentioning again
When you make biryani
Take double amount of meat against rice
150 g yogurt, water strained
Whipped properly
170 g onion, sliced finely
Part will be used in cooking mutton
Rest will be used to make barista
4 pc dry plum
75 ml refined oil
For making onion barista
We need 2 kinds of biryani masala
1st biryani masala is home made
Take 1 tbsp

You can use biryani masala from market
We need 1 tbsp biryani masala 2
Took same amount of mace & green cardamom
Grinded in mixie
1 pc lemon
I'll use the extra lemon in salad
2 tbsp ginger-garlic paste
1/2 tsp garam masala powder
Salt as per taste
1/2 tsp black pepper powder
Soaked little casey & saffron color in warm water
30 g solid condensed milk, slightly mashed
2 tsp red chili powder
150 ml boiled milk
Add a pinch of 2 biryani masalas
And little salt in milk & mix
100-120 g, Shree brand ghee
3 tsp kewra water
2 tsp rose water
2 drops of essence
In whole spices, we need
5 bay leaves
10 cloves, few mace
10 cubeb piped pepper
10 white pepper
4 small cinnamon
Little piece of nutmeg
10 black pepper
2 black cardamom
8 green cardamom
We need this to cook biryani rice
And to cook mutton
Now, we will marinate mutton
Add 2 tsp salt in it
Add ginger-garlic paste
Add garam masala powder
Add black pepper powder
Add red chili powder
Add 1/2 tsp biryani masala 1
Add 1/2 biryani masala 2
Add whipped yogurt
Mix the ingredients thoroughly
Marinate mutton & refrigerate for 4 hrs
Bring it out of fridge 45 min - 1 hr before cooking
So, the mutton attains room temp.
If you have less time
Then marinate for at least 2 hrs
In this case, no need to refrigerate
Wash basmati rice with soft hands
Applying force will break rice
Soak the washed rice for 1 hr
Rice was soaked for almost an hour
Now, we will cook the biryani rice
Heating a pot with water on high flame
Add half of whole spice in water
Add little salt
Add juice of 1/3 lemon
Mix a bit
Add 1 tsp ghee
Ghee enhance taste of rice
And the rice do not stick together
Add 1 tsp kewra water
Allow the water to boil
When comes to boil, add rice
Water came to boil
Add the rice in it
Cook the rice till 70%
Rice is 70% cooked
It took about 6 min
Strain out the water
Spread the rice across a big dish
So, the cooking process stops
If rice gets overcooked & turns soft
Then keep the dish under running fan
Rice will get harder
Now, make onion barista
Heat pan on high flame
Add refined oil to it
Oil is heated up
Add half of the sliced onion
Stir the onion continuously
So, it fries uniformly
Onion got golden color
Strain out the onion
Sprinkle little salt on fried onion
This keeps onion crunchy for longer time
Now, cook the mutton
Keep pressure cooker on high flame
Add 75 g ghee in it
Ghee heated up
Add rest of the whole spices
Aroma is released from spices
Add rest of sliced onion
Fry till golden brown
Turned golden in color
Add marinated mutton
Saute for 5-6 mins
Saute done
Oil released from mutton
Add 1 tsp biryani masala 1
Add 1 tsp biryani masala 2
Mix & saute well
After adding biryani masalas, saute for another 5 mins
5 mins saute done
Add about 700 ml water
Check the salt now
Need to add little salt
Mixing the salt properly
Covering the pressure cooker lid
Putting the weight valve
Cook mutton till 90%
Allowed 14 whistles
Allow whistles as per quality of mutton
Turn off the flame
Allow pressure to normalize
Pressure inside cooker normalized
Open the lid
Now, separate stock from cooked mutton
Separate fat from mutton stock
Add 3 tsp ghee to separated fat
And mix it
We will use it in top biryani layer
Now, layer the biryani
Took a medium flat pot
This pot is 10 yrs old
Cooked countless biryani with it
First add plums
Add lemon juice
Add 1/2 tsp biryani masala 1
Add 1/2 tsp biryani masala 2
Add mutton stock to it
Mix it
Add little milk
Add 1/2 tsp ghee
Mix nicely
Check the salt
Add the mutton & mix
Add 1/2 tsp biryani masala 1
Add 1/2 tsp biryani masala 2
Spread some onion barista
Add a layer of rice
Spread 2 tsp ghee over rice
Add 1/2 solid condensed milk
Spread little milk
Add 1/2 tsp biryani masala 1
Add 1/2 tsp biryani masala 2
Spread little casey soaked diluted saffron
Add final layer of rice
Since mutton & stock present in bottom layer
The flavor spreads over complete rice during steaming

Spread the mix fat & ghee on top
Spread rest of solid condensed milk
Add 1/2 tsp biryani masala 1
And add 1/2 tsp biryani masala 2
Add rest of the milk
Add 2 tsp kewra water
And 2 tsp rose water
Add 2 drops of essence
Spreading remaining diluted saffron water
Lastly, spread rest of onion barista
Make a flour dough of 200-250g
Stick the dough on the pot edge
Did not kept the gap for steam release
As I am going to keep a weight after covering
Steam for 8 mins on high flame
Lessen the time if stock is less
8 mins overs, turn flame to low
Put a tawa over flame
Place the pot on tawa
And steam for 30 mins
30 mins overd
Our mutton biryani is ready!
Opening the lid to show
Take a small plate to shift rice
So, meat at bottom can be reached
See, how lovely the biryani is cooked!
Aroma of biryani has filled the air
Mix a bit [rice & mutton]
Serving the biryani in a plate
This quantity will serve 4-5 persons
